A trip to Dollywood isn't necessary to enjoy Dolly's incredible soup. It takes about 15 minutes to prepare this rich and creamy soup and is a comfort in cold weather.
4 T. butter
1/4 c. all-purpose flour
1 t. garlic powder
1 t. onion powder
1/2 - 3/4 t. salt
1/4 t. white pepper
14.5 oz. can chicken broth, regular or low-sodium*
15 oz. can mixed vegetables or Veg-All, drained*
2 c. Half and Half
In a large saucepan, melt butter; stir in flour, garlic powder, onion powder, white pepper and salt; simmer 1 minute.
Whisk in the broth and vegetables; bring mixture to a simmer for 5 minutes.
Use a potato masher, emulsion blender or blender to mash the vegetables into the mixture to the desired consistency.
Whisk in the Half and Half; simmer another 5 minutes.
Serve with biscuits or cornbread, if desired.
4 servings.
*Vegetable broth can be used for a vegetarian option.
