Preheat the oven to 200 degrees F. Line a baking sheet with parchment paper or a silpat mat. DON'T use wax paper!
Slice strawberries into 1/8 inch thick slices. If they are sliced thicker, they will take longer to dry.
Arrange the strawberry slices on parchment paper, making sure they don't touch each other.
Bake for about 2 hours, turning the baking sheet halfway through cooking time.
Gently peel the strawberry slices off of the parchment paper; flip them over. You can use a new piece of parchment paper after peeling them, but you can use the same sheet, if preferred.
Continue baking for 30-45 minutes, checking every 10 minutes, until fully dehydrated and crisp.
Remove the baking sheet from the oven. Allow strawberries to cool completely on the baking sheet.
Store in an airtight container at room temperature.
Makes 1 cup.
