Honey Roasted Anjou Pears with Gorgonzola Cheese

Description
This easy and delicious pear dish makes a great appetizer, dessert or snack. It's elegant enough to serve on holidays and special occasions. You only need 5 ingredients and is ready in about 25 minutes.
Ingredients
3 Anjou pears, ripe but not too soft (or Concorde pears)
1 T. honey, divided plus more for serving
6 thyme sprigs, plus more for garnish
6 t. Gorgonzola cheese
6 halves or chopped walnuts, for garnish
salt and freshly ground black pepper, to taste

Preheat the oven to 390 degrees F.
Cut pears into halves lengthwise. Scoop out and discard the seeds with a teaspoon or a melon baller.
Place the halves open-faced on a sheet pan or baking dish. Drizzle with honey; place the thyme sprigs on top.
Bake for 10 minutes or until the flesh is soft enough when pierced with a fork. Let cool about 10 minutes.
Place 1 t. Gorgonzola cheese on each pear. Season with salt and pepper.
Serve, garnished with walnuts and a drizzle of more honey, if desired.
These baked pears can be served either warm or cold. If you're not wanting the cheese to melt, wait until the pears have cooled down completely before adding the cheese.
