Description

Everyone loves the good buttery spread for Cheesecake Factory's breads. It's to die for. But you can make it at home to enjoy on toast, muffins, or even pancakes, as well. It's easy and lets you to enjoy fresh butter without any additives.

Ingredients

16 oz. heavy whipping cream, at room temperature
pinch of salt or to taste
ice water

Let the heavy whipping cream come to room temperature for 30 minutes.

Add the whisking attachment to the mixer.
Add the guard if you have one to keep the kitchen clean.

Add the heavy whipping cream to the mixing bowl, leaving 1/4 cup of room at the top for air to be whipped in.

Mix on Low, gradually turning up the speed until reaching the top speed setting of 10. As the mixture thickens, this can be done without making a mess.

Mix until the buttermilk separates from the butter, which takes about 3 minutes.

Pour out the buttermilk and save for other uses.

Rinse the butter with ice water about 3 times until the water is clear. After each rinse, make sure to use new ice water and discarding the old water.

Transfer the butter to the mixing bowl; squeeze excess liquid out of the butter using a cheese cloth or paper towel to get all of the moisture out.

Add a pinch of salt or to taste; kneed it into the butter.

Press firmly into molds lined with Cling Wrap or shape into a rectangle and wrap with Cling Wrap.

Serve.


* This homemade butter will keep for 2 – 3 weeks wrapped tightly and put in an airtight container with the date it was made in the refrigerator or 3 months in the freezer.
