Description
With the price of eggs so high and even hard to find, this cake is perfect for the times. The mayonnaise takes the place of eggs and oil in this recipe. The cake is moist and delicous with a decadent chocolate cream cheese frosting.
Ingredients
- Cake:
- 2 c. all-purpose flour, sifted
- 1/3 c. cocoa powder, sifted
- 1 c. sugar
- 2 t. baking soda, fresh
- 1/4 teaspoon salt
- 1 t. real vanilla extract
- 1 c. regular mayonnaise, not light
- 1 c. HOT water
- Chocolate Cream Cheese Frosting:
- 8 oz. full-fat cream cheese, softened at room temperature
- 5 T. unsalted butter, softened at room temperature
- 1/2 c. cocoa, sifted
- 3 c. powdered sugar
- 1 t. real vanilla extract
- 1 T. white or chocolate milk
Steps
- Cake:
- Preheat the oven to 350 degrees F. Grease a 9×13 inch baking pan.
- In a large bowl, whisk together all cake ingredients, stopping as soon as it comes together.
