Description

With the price of eggs so high and even hard to find, this cake is perfect for the times. The mayonnaise takes the place of eggs and oil in this recipe. The cake is moist and delicous with a decadent chocolate cream cheese frosting.

Ingredients

Cake:
2 c. all-purpose flour, sifted
1/3 c. cocoa powder, sifted
1 c. sugar
2 t. baking soda, fresh
1/4 teaspoon salt
1 t. real vanilla extract
1 c. regular mayonnaise, not light
1 c. HOT water

Chocolate Cream Cheese Frosting:
8 oz. full-fat cream cheese, softened at room temperature
5 T. unsalted butter, softened at room temperature
1/2 c. cocoa, sifted
3 c. powdered sugar
1 t. real vanilla extract
1 T. white or chocolate milk

Cake:
Preheat the oven to 350 degrees F. Grease a 9×13 inch baking pan.

In a large bowl, whisk together all cake ingredients, stopping as soon as it comes together.

Pour the batter into the prepared pan; smooth out to the sides.

Bake for 25-30 minutes or until a wooden toothpick comes out clean.

Allow to cool completely. Frost.

Frosting:
Mix all frosting ingredients together until smooth.

Spread frosting on completely cooled cake.

16 servings.

Store in an airtight container in the refrigerator, for 3-4 days.
