Did you know that you can make your own cream cheese at home? It's getting really expensive to buy at the grocery store, so save some money and make your own. Or maybe you need it and ran out. It takes just 3 ingredients and is really easy to make yoursel

Ingredients

4 c. whole milk
2-3 T. lemon juice (lime juice or vinegar)
1/4 t. salt
Optional additions: garlic, choice of herbs

In a saucepan, bring the milk to a boil over medium-high heat, stirring constantly until it starts to simmer.

Once boiling, reduce the heat to low-medium heat, add add the lemon juice or vinegar 1 T. at a time while constantly stirring, 1 minute between each addition. The curds will begin to separate and curdle. This should take just a few minutes. There will be a green liquid on the bottom and thick curdles on top. This all happens fast. Remove from the heat.

Place a strainer with a cheesecloth over a large bowl; pour the curd mixture into it. Let it strain, getting rid of the whey. Let the curds cool for about 15 minutes.

Transfer the curds to a food processor or a blender. Add salt. Mix until they're totally smooth and creamy. This should take about 3-4 minutes, but keep going until it's not grainy.

If desired, add garlic, herbs or more salt.

Refrigerate for at least 30 minutes before serving.

Store the cream cheese in the refrigerator. Use it within 7 days, but if stored properly it will probably keep for up to 2 weeks.
