Six servings of wonderfully sweet pecans that can be given as gifts at holiday time. Package them in holiday inspired cellophane bags, tie them with colorful ribbons and you have an easy homemade gift made with love!
1 c. brown sugar, packed
2 T. ground pecans
1 T. cornstarch
1 T. bourbon
1 egg white, room temperature
pinch of cream of tartar
pinch of salt
2 c. pecan halves
Preheat oven to 300 degrees.
Put brown sugar, ground pecans, and cornstarch in a bowl and then mix well. Add the bourbon and blend until smooth. Beat egg white with cream of tartar and salt until it holds stiff peaks. Stir in 1/3 of the egg whites into the sugar mixture and then blend well. add remaining egg whites (it will become more liquid). Add pecan halves, stirring gently to coat nuts. Arrange the coated pecans top up on a buttered baking sheet. Separate well as batter will puff up. Bake for 12 minutes until puffy and golden brown. Allow the nuts to cool for at least a minute and then move to a wire rack to cool. Store in an air-tight container.
