Description
Use your slow cooker to make a great, delicious, comforting and satisfying meal on a cold winter day.
Ingredients
- 2 lb. boneless, skinless chicken breasts, trimmed
- 1 onion, diced
- 1 c. sliced carrots
- 1 c. sliced celery
- 1 T. freshly grated ginger
- 1 T. minced garlic
- 8 c. low-sodium chicken broth
- 1 t. dried thyme
- 1 t. dried oregano
- 12 oz. egg noodles
- salt and pepper, to taste
- 3 T. freshly chopped parsley
Steps
- Place chicken in a 6-8 quart slow cooker. Add onion, carrots, celery, ginger and garlic; add chicken broth; stir in thyme and oregano.
- Cover; cook on Low for 6-8 hours, or on High for 3-4 hours.
- Transfer chicken to a cutting board; shred chicken with a fork; add chicken back into the slow cooker.
