You don't have to wait for strawberry season to make this delicious strawberry shortcake lasagna. Strawberries are available year round, so go ahead and treat yourself to this scrumptious dessert.
1 box vanilla instant pudding
1/2 c. strawberry juice
1 1/2 c. non-fat milk
1 t. vanilla extract
24 Lady fingers (or use angel food cake)
1 c. whipping cream
1 lb. fresh strawberries, washed, hulled, patted dry and sliced
In a bowl, whisk pudding, milk and vanilla; set aside.
With a hand mixer or in the bowl of a stand mixer, whip the cream until it just makes stiff peaks.
Dip lady fingers quickly in strawberry juice; arrange them in the bottom of a dish.
Spread half of the pudding mixture over the lady fingers.
Place the strawberries in a single layer over the pudding.
Repeat with remaining lady fingers, pudding mixture and strawberries.
Top with the whipped cream and strawberries.
Refrigerate for at least 4 hours before serving.
