Enjoy a yummy, rich fudge that looks fabulous too. You get all of the good stuff in every single bite!
3 c. white chocolate chips
14 oz. can sweetened condensed milk
4 T. butter
½ package caramels (about 30) plus 1 T. water
½ c. coarsely chopped pecans
⅓ c. toffee bits
Spray an 8 x 8 inch pan with non-stick cooking spray, then line it with waxed paper, with waxed paper hanging over the sides to help lift out later. A spatula might be needed to be used underneath one side to help it loosen.
In a microwavable bowl, melt caramels and the water in the microwave until caramels lose shape, about 60 seconds. Stir; set aside.
Add white chocolate chips and butter in a shallow microwavable bowl; microwave 90 seconds on 50% power; stir well.
Add milk; stir; microwave in 90 second intervals; stir well.
Depending on your microwave, it may be necessary to continue to microwave at 30 second intervals stirring well at the end of each interval. Stir frequently to prevent scorching.
When chips are melted, pour into the prepared pan; top with melted caramel. Swirl caramel through the white chocolate mixture.
Garnish immediately with chopped pecans and toffee bits, pressing down slightly.
Refrigerate 2-3 hours until firm.
Lift out using the overhanging waxed paper. Slice into 64 squares.
