Rigatoni Pasta Pie

Description

This dish is so beautiful you can serve it to guests. It's made with a homemade, thick red meat sauce and two different cheeses to make a delicious and economical meal that can be served on special days.

Ingredients

1 T. olive oil
breadcrumbs
1 lb. ground beef, ground sirloin or turkey
1/2 onion, grated or finely chopped
4 cloves garlic, minced
1 pinch red pepper flakes
1 pinch coarse salt
freshly ground pepper

28 oz. can good quality whole peeled tomatoes, crushed by hands, with their juices
1 lb. rigatoni pasta
1 c. freshly grated Parmesan cheese
2 c. shredded Mozzarella cheese

fresh basil, optional

Preheat oven to 400 degrees. Grease or spray 9 inch springform pan with cooking spray then sprinkle bread crumbs around the pan.

Heat oil in large skillet over medium-high. Add ground meat and onion; cook browned, about 5 minutes. discard any grease, if necessary. Add garlic, red pepper flakes, salt and pepper; sauté 1 minute add crushed tomatoes; simmer on medium until thickened, 20 minutes.

While meat sauce is cooking, boil rigatoni in well salted boiling water until slightly underdone, about 12 minutes; drain; rinse with cool water; drain.
Toss with Parmesan cheese.

Tightly pack rigatoni in the prepared pan, standing rigatoni on their ends. Carefully pour meat sauce over the pasta, pushing the meat down into the holes the best you can.

Bake 15 minutes; remove; top with Mozzarella cheese; bake 10 - 15 minutes, or until cheese is browned and bubbly.

Let sit 15 minutes, to ensure that it doesn't fall apart when slicing.

Serve. Garnish with fresh basil if desired.
