This low carb appetizer tastes like cheesy breadsticks. It's loaded with gooey cheese, fresh garlic and herbs. Serve with your favorite red sauce for dipping.
1 head raw cauliflower, riced
1/2 c. shredded Mozzarella cheese
1/2 c. shaved Parmesan cheese
1 large egg
1/2 T. freshly minced garlic
1/2 T. freshly chopped basil
1/2 T. freshly chopped Italian flat-leaf parsley
1 t. salt
1/2 t. black pepper
3/4 c. shredded Mozzarella cheese
Preheat oven to 425 degrees. Line a baking sheet with parchment paper.
To rice the cauliflower, core it and break it into florets. Place it in the bowl of a food processor and pulse until it is the texture of rice.
In a large bowl, mix riced cauliflower, 1/2 c. shredded Mozzarella cheese, 1/2 c. Parmesan cheese, 1 egg, 1/2 T. fresh garlic, 1/2 T. fresh basil, 1/2 T. fresh parsley, 1 t. salt and 1/2 t. black pepper until combined and holds together. Place mixture onto the prepared baking sheet and spread out into a rectangle about 9 x 7 inches and 1/4 inch thick.
Bake for 10-12 minutes. Remove from oven; top with 3/4 c. shredded Mozzarella cheese; return to oven to continue baking until the cheese is melted and starting to brown. Cool about 10 minutes. Cut into breadsticks.
Garnish with fresh herbs and Parmesan cheese. Serve with red sauce.
