You can travel to Greece to learn how to make authentic tzatziki or you can follow this recipe. Serve it with pita bread or raw veggies as an appetizer or in rice bowls.
1/2 large cucumber, unpeeled
1 1/2 c. plain full-fat Greek yogurt
2 large garlic cloves, finely minced
2 T. extra virgin olive oil
1 T. white vinegar
1/2 t. salt
1 T. minced fresh dill
pita bread or raw veggies, for serving
Grate cucumber; drain through a fine mesh sieve or in cheesecloth overnight in refrigerator; squeeze out excess liquid.
Combine yogurt, garlic, oil, vinegar and salt in a large bowl; cover; refrigerate overnight.
Transfer grated cucumber and fresh dill to the yogurt mixture; stir to combine.
Serve chilled with pita bread or veggies, for dipping.
Makes 2 cups.
