This is an easy and delicious main dish that will surely impress family and friends with its yummy garlic sauce. Serve it with pasta, potatoes or rice.
1 1/2 lb. skinless, boneless chicken breasts, thinly sliced
2 T. olive oil
1 c. heavy cream
1/2 c. chicken stock/broth
1 t. garlic powder
1 t. Italian seasoning
1/2 c. freshly grated Parmesan cheese (not the grated bottled kind)
1 c. fresh spinach, chopped
1/2 c. sun-dried tomatoes
pasta for serving, if desired
In a large skillet, add olive oil; cook chicken on medium-high heat for 3-5 minutes per side or until brown and cooked until no longer pink in center. Remove chicken; set aside on a plate/platter.
Add heavy cream, chicken stock/broth, garlic powder, Italian seasoning and Parmesan cheese; whisk over medium-high heat until it starts to thicken. Add spinach and sun-dried tomatoes; simmer until spinach starts to wilt. Add chicken back to the skillet.
Serve over favorite pasta, if desired.
