This light, delicious salad dressing has all natural ingredients, no oils or sugar. It's low carb, low sodium and vegan.
2 ripe Anjou red pears, peeled, roughly chopped, seeds discarded
1 t. freshly squeezed lemon juice
6 fresh mint leaves, stems removed
1 t. marjoram
1 t. maple syrup
1 t. ginger, minced
1 t. salt, optional
2 t. water, optional
1 t. poppy seeds
In a blender, place all ingredients, EXCEPT for the poppy seeds; blend on Low speed until fully blended.
Add poppy seeds; mix with a spoon. Immediately transfer to a well sealed glass bottle.
Refrigerate for at least 30 minutes before serving it in salads.
4 servings.
*This dressing stays good for 2 weeks in the refrigerator.
