This side dish is simple to make with just a few ingredients. It's buttery and full of flavor. It goes well with just about any main dish.
1 stick butter (1/2 c.)
1 c. Minute rice
20 oz. can French onion soup or beef consomme
Preheat oven to 350 degrees.
Melt butter in an 8 x 11 casserole dish; add rice; stir to coat.
Bake 3 - 4 minutes or until toasted.
Once the rice is light brown and toasted, add soup; stir to combine. Return to oven.
Bake covered, 40 - 45 minutes or until rice is tender, fluffy and all of the liquid is absorbed.
4-5 servings.
* Variations: add 1/2 c. diced onions, 1/2 c. fresh or 1 can sliced mushrooms, diced pimento peppers, or a handful of sliced toasted almonds.
