This cake is full of flavor, moist and just about the best cake ever. The frosting is super delicious and makes the cake even better.
Banana Cake:
2 c. all-purpose flour
1 t. baking soda
1/4 t. salt
1/2 c. butter, softened
1 1/3 c. sugar
2 eggs
1 c. sour cream
1 t. vanilla extract
4 medium bananas, mashed (about 2 c.)
Cream Cheese Frosting:
8 oz. cream cheese, at room temperature
1/2 c. butter, at room temperature
1 t. vanilla extract
3 c. powdered sugar
Banana Cake:
Preheat oven to 350 degrees. Right before filling, spray 2- 8 inch cake pans with non-stick spray.
In a large bowl, beat butter and sugar together until creamy. Add eggs; beat until combined; beat in sour cream and vanilla. Add flour, baking soda and salt; beat just until combined. Stir in mashed bananas; mix until combined.
Pour batter equally into prepared cake pans. Bake for about 35-40 minutes or until wooden toothpick inserted in center comes out clean. Remove cake from oven; allow to cool.
Once cake has cooled, frost cake.
Cream Cheese Frosting:
In a medium bowl, beat cream cheese and butter together until combined; add vanilla. Gradually add powdered sugar; beat until smooth and creamy.
Slice and serve.
