Creamy Pea and Bacon Pasta Salad

Description

This pasta salad is easy to make and takes about 20 minutes to prepare. It's full of delicious ingredients like peas, crispy bacon, small pasta and Parmesan cheese.

Ingredients

12 oz. shell pasta
2 c. frozen peas, fully thawed
12 oz. thick-cut bacon, cooked and chopped
1/2 c. freshly grated Parmesan cheese

Creamy Dressing:
3/4 c. mayonnaise
2 T. olive oil
1 T. apple cider vinegar
1 t. granulated sugar, or to taste
1 t. salt, or to taste
1/2 t. garlic powder, or to taste
1/2 t. onion powder, or to taste
1/4 t. black pepper, or to taste

Pasta:
Cook pasta in a large pot of boiling water according to the package directions until al dente. Drain; rinse pasta under cold water to stop the cooking process.

While the pasta is cooking, ensure that the peas are fully thawed. Cook and crumbled the bacon; grate the Parmesan cheese.

Creamy Dressing:
In a small bowl, combine the mayonnaise, olive oil, apple cider vinegar, sugar, salt, garlic powder, onion powder, and black pepper; whisk ingredients together until well blended and smooth.

Assembly:
In a large bowl, add the cooked and drained pasta, thawed peas, crumbled bacon, and grated Parmesan cheese. Pour the dressing on top.

Stir until all ingredients are evenly coated with the dressing.

Cover the bowl with a lid or plastic wrap. Enjoy immediately or refrigerate the salad for 1 to 2 hours.

8-10 servings.
