Description

Ingredients
- 2 T. canola oil
- 1 lb. boneless, skinless chicken breasts, cut into bite sized pieces
- 1/2 c. chopped yellow onion
- 2 T. taco seasoning mix, from a 1.25 oz. package
- 15 oz. can whole black beans, drained and rinsed
- 10 oz. can Ro*Tel® Original Diced Tomatoes and Green Chilies, undrained
- 1 c. water
- 1 1/4 c. instant brown rice, uncooked
- 1 c. shredded Cheddar and Monterey Jack cheese blend, divided
- chopped cilantro, optional
- Additions, if desired: sour cream, sliced black olives, avocado slices, taco sauce, tortilla chips
Steps
- Heat oil in large skillet over medium-high heat; add chicken; cook 3 minutes, stirring occasionally. Add onion and taco seasoning; cook 2 minutes. Stir in black beans, tomatoes and water; bring to a boil. Stir in rice. Cover; reduce heat; simmer 7 - 10 minutes or until rice is tender. Stir in 1/2 c. cheese blend.
- Sprinkle top with remaining cheese. Garnish with cilantro, if desired. Serve with additions of your choosing, if desired.
