Ingredients

1 lb. cheese ravioli
3 oz. unsalted butter
1/4 c. freshly squeezed lemon juice
1 oz. grated Parmesan
1 t. salt
1 t. black pepper
1 t. dried thyme
2 garlic cloves, grated
7 oz. green asparagus, woody ends snapped off
crushed red pepper flakes, for serving
freshly ground black pepper, for serving
lemon zest, for serving

Bring a large pot of well salted water to a boil.

Heat a large skillet over low heat; add butter; stir until melted. Add garlic; sweat for about 1 minute. Stir in salt, pepper and thyme. Add lemon juice; stir for 30 seconds. Add asparagus in a single layer; cook for 3-5 minutes.

In the meantime, add ravioli to the pot of boiling water; cook, for about 3 minutes. Drain, reserving 1/2 c. pasta cooking water.

Add 1/4 c. of the reserved cooking water to the asparagus; cook for 1 minute. Remove from the heat; stir in the Parmesan cheese. Add ravioli; toss.

Serve, garnished with freshly ground black pepper, red pepper flakes, lemon zest and more Parmesan cheese, if desired.

4 servings.
