Ravioli in a Lemon Parmesan Butter Sauce

Ingredients

  • 1 lb. cheese ravioli
  • 3 oz. unsalted butter
  • 1/4 c. freshly squeezed lemon juice
  • 1 oz. grated Parmesan
  • 1 t. salt
  • 1 t. black pepper
  • 1 t. dried thyme
  • 2 garlic cloves, grated
  • 7 oz. green asparagus, woody ends snapped off
  • crushed red pepper flakes, for serving
  • freshly ground black pepper, for serving
  • lemon zest, for serving

Steps

  1. Bring a large pot of well salted water to a boil.
  2. Heat a large skillet over low heat; add butter; stir until melted. Add garlic; sweat for about 1 minute. Stir in salt, pepper and thyme. Add lemon juice; stir for 30 seconds. Add asparagus in a single layer; cook for 3-5 minutes.
  3. In the meantime, add ravioli to the pot of boiling water; cook, for about 3 minutes. Drain, reserving 1/2 c. pasta cooking water.
