Description
These classic Mexican-American chimichangas are surprisingly easy to make at home in your air fryer. They are the perfect, crispy and delicious meal to serve instead of tacos on Taco Tuesdays.
Ingredients
c. cooked and shredded chicken, beef, or pork
1/2 c. finely chopped onion
5 oz. can diced green chiles
1 t. ground cumin
1/2 t. chili powder
1/2 t. garlic powder
1/4 t. salt
1/4 t. black pepper
16 oz. can refried beans
1 c. shredded Cheddar cheese
8 large flour buritto size tortillas
oil, for air frying
topping choices: diced tomatoes, guacamole, sour cream, or salsa

In a large bowl, combine the choice of meat, green chiles, onion, cumin, salt, pepper, chili and garlic powders.
To warm the tortillas, wrap them in a towel and microwave for 30-45 seconds or follow the package directions.
Spoon about 1/2 c. meat mixture, 2 T. refried beans, and a bit of cheese onto each tortilla. Tightly roll up each tortilla; place them fold-side down on a baking sheet. Do not overfill. Use a wooden toothpick to keep them from unrolling, if necessary.
Preheat the air fryer to 375 degrees F.
Lightly spritz or baste the chimichangas with cooking oil. Air fry for 6-8 minutes, flipping over halfway through, working in batches as necessary.
Allow the chimichangas to cool 1-2 minutes before serving.
Serve topped with diced tomatoes, guacamole, sour cream, or favorite salsa.
