Description
This is an easy, delicious soup to make and can be ready in about 30 minutes. It's satisfying, comforting and lower in fat than most creamy soups, plus it's simple to make variations to your taste.
Ingredients
- 1/2 onion, chopped
- 1/4 c. chopped fresh parsley or chives
- 1 T. butter
- 1 clove garlic, minced
- 3 T. all-purpose flour
- 2 1/2 c. whole milk
- 1 c. chicken broth
- 2 - 12 oz. cans whole kernel corn, drained
- 2 1/2 T. cream cheese, at room temperature
- 1 t. garlic salt
- 1/2 t. ground black pepper
- ground cayenne pepper, to taste
Steps
- Combine onion, parsley, butter, and minced garlic in a large pot over medium heat; cook, stirring until onion is tender, about 5 minutes.
- Whisk in flour to make a thick paste; whisk in milk and chicken broth until soup thickens slightly.
- Stir in corn and cream cheese; cook until heated through. If desired, use an immersion blender until the desired creaminess is reached.
