Description
This pizza won't disappoint on Meatless Mondays, Fridays during Lent or any day of the week. It's full of delicious roasted garlic flavor, three different cheeses, fresh spinach and seasonings.
Ingredients
1 pizza dough, store-bought or homemade
2 T. olive oil
4 cloves garlic, minced
1 c. Ricotta cheese
1 1/2 c. shredded Mozzarella cheese
1/2 c. grated Parmesan cheese
1 1/2 c. fresh spinach
1/2 t. dried oregano
salt and pepper, to taste
cornmeal, for dusting, optional

Preheat oven to 475 degrees F. If you have a pizza stone, place it in the oven while the oven preheats.
In a small pan, heat the olive oil over medium heat; add the minced garlic; cook until fragrant and lightly golden, about 1-2 minutes. Remove from heat.
Roll out the pizza dough on a lightly floured surface to the desired thickness. If using a pizza stone, dust a pizza peel with cornmeal to prevent sticking, and place the rolled-out dough on it. Or, place the dough on a parchment-lined baking sheet.
Brush the garlic-infused olive oil over the entire surface of the pizza dough. Spread the Ricotta cheese evenly over the dough, then a layer of Mozzarella and grated Parmesan cheeses. Top with fresh spinach. Sprinkle the oregano, salt, and pepper over the top.
Carefully place the pizza on the preheated pizza stone or the baking sheet; place in the oven.
Bake 10-12 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.
Remove from the oven.
Serve immediately.
