Weight Watchers Instant Pot Tuscan Chicken Pasta

Ingredients
1/2 c. sun-dried tomatoes without oil, or halved grape tomatoes
1 T. garlic, minced
3 T. Italian seasoning
1/4 t. black pepper
2 lb. chicken breasts, diced into 1-inch cubes
12 oz. whole wheat pasta
3 c. fat-free chicken broth
3/4 c. fat-free plain Greek yogurt
3/4 c. fat-free cottage cheese
2 c. baby spinach
2 T. fresh basil or 1 t. dried
2/3 c. fat-free Parmesan cheese, grated

Lightly spray the instant pot with cooking spray. Press the sauté button; when the pot is hot, add the tomatoes, garlic, Italian seasoning, and pepper. Cook until just fragrant, stirring to prevent sticking.
Add the chicken to the pot. Brown chicken on all sides for 3-5 minutes.
Add the pasta and chicken broth to the pot; stir to make sure all of the pasta is pushed below the liquid.
Cook on high pressure for 3 minutes.
While the pasta is cooking, blend the yogurt, cottage cheese, and Parmesan cheese together until smooth; set aside.
When the cook time is finished, quick release the pressure; remove the lid. Drain and set aside any extra liquid, in case it's needed later.
Add the spinach and fresh basil to the pot; stir until the leaves have wilted.
Allow the pasta to cool for 1-2 minutes so that the dairy doesn't curdle.
Add the Greek yogurt mixture; stir until mixed. If the sauce is too thick, add some reserved pasta water to the pot; stir.
Serve.
