This is the perfect main dish for busy weeknights or when wanting a dish that will impress for a special occasion. The chicken is juicy on the inside and crispy on the outside served with a tangy, zesty lemon sauce.
Ingredients
- Chicken:
- 8 - 2 oz. each chicken tenderloins
- 1/2 c. all-purpose flour
- 2 large eggs, beaten
- 1 c. panko breadcrumbs
- zest from 1 lemon
- 1/4 c. grated Pecorino Romano cheese (or Parmesan cheese)
- 1/4 c. extra virgin olive oil
- 2 T. butter
- Sauce:
- 1 T. extra virgin olive oil
- 1 T. all-purpose flour
- 1 T. minced garlic
- 1/4 c. milk
- 3/4 c. heavy cream
- 1/4 c. chicken broth
- 2 T. lemon juice
- 1 T. butter
Steps
- Chicken:
- Use a meat mallet to flatten each tenderloin to a thin, even thickness.
- Set up 3 bowls for dredging: one with the flour, one with the beaten eggs, and one with the breadcrumbs, lemon zest, and cheese.
