Description
This salad can be a side salad or served as a light main dish. It's full of a variety of greens, shredded carrots, chicken, and bacon all tossed with a homemade dressing.
Ingredients
- 2 c. shredded romaine lettuce
- 2 c. chopped cabbage
- 1 c. shredded kale
- 1 c. shredded carrots
- 8 oz. grilled chicken breast, chopped (or leftover chicken)
- 3 strips cooked center cut bacon, crumbled
- 2 T. sunflower seeds
- 1/2 avocado, diced
- Dressing:
- 1/3 c. orange juice
- 2 T. spicy brown mustard
- 1 T. 100% pure maple syrup (or honey)
- 3 T. mayonnaise
- 5–6 drops sriracha hot sauce, or to taste
- pinch of salt
- freshly ground pepper, to taste
Steps
- Preheat the oven to 400 degrees F. Line a rimmed baking sheet with parchment paper.
- Arrange the bacon on the baking sheet; bake 20 minutes. Transfer the cooked bacon to a paper towel lined plate to cool. Crumble bacon when cooled.
- Prepare dressing by mixing all ingredients together until combined.
