Description

This salad can be a side salad or served as a light main dish. It's full of a variety of greens, shredded carrots, chicken, and bacon all tossed with a homemade dressing.

Ingredients

2 c. shredded romaine lettuce
2 c. chopped cabbage
1 c. shredded kale
1 c. shredded carrots
8 oz. grilled chicken breast, chopped (or leftover chicken)
3 strips cooked center cut bacon, crumbled
2 T. sunflower seeds
1/2 avocado, diced

Dressing:
1/3 c. orange juice
2 T. spicy brown mustard
1 T. 100% pure maple syrup (or honey)
3 T. mayonnaise
5–6 drops sriracha hot sauce, or to taste
pinch of salt
freshly ground pepper, to taste

Preheat the oven to 400 degrees F. Line a rimmed baking sheet with parchment paper.

Arrange the bacon on the baking sheet; bake 20 minutes. Transfer the cooked bacon to a paper towel lined plate to cool. Crumble bacon when cooled.

Prepare dressing by mixing all ingredients together until combined.

Add all dressing ingredients to a mason jar; shake until combined. Or, whisk ingredients together in a bowl.

Mix together the romaine, cabbage, kale, and carrots in a large bowl; add the crumbled bacon and grilled chicken; toss with dressing.

Top the salad with the diced avocado and sunflower seeds.
