Farfalle Pasta with Spinach, Mushrooms, and Caramelized Onions

Description
This easy vegetarian dish can be a main dish or a side dish. The bowtie pasta is served in a creamy sauce with mushrooms, spinach half-and-half, Parmesan cheese and caramelized onions.
Ingredients
Caramelized Onions:
1 T. olive oil
3 large yellow onions, sliced
1/4 t. salt
1 T. balsamic vinegar
Creamy Pasta Sauce:
1 T. olive oil
10 oz. button mushrooms, sliced
6 oz. fresh spinach
1 c. half-and-half*
1 c. Parmesan cheese, shredded
1/4 t. salt
Pasta:
8 oz. farfalle pasta (bowtie pasta)

Caramelized Onions:
Heat the olive oil on medium-high heat in a large skillet; add sliced onions; cook on high heat for about 10 minutes, stirring constantly. The onions should start to brown, but not burn.
Reduce heat to medium; cook onions for 10 more minutes, stirring, as onions brown even more without burning. Sprinkle a pinch of salt over onions.
Cook for 10 more minutes on medium or low heat, stirring occasionally to make sure onions don’t stick to the bottom of the pan or burn. The onions should have been cooked onions now for 30 minutes.
Remove the skillet from heat. Sprinkle the onions with a small amount of balsamic vinegar to deglaze the pan.
Use a spatula to stir the onions and scrape the bottom of the pan, and coating onions with a pinch of balsamic vinegar that was just added. Transfer caramelized onions to a plate.
Mushrooms and Spinach:
Heat 1 T. olive oil in the same skillet over medium heat; add sliced mushrooms; sprinkle with a pinch of salt.
Cook mushrooms for about 5 minutes, stirring occasionally, until mushrooms are soft. Add the spinach to the skillet; stir on low heat just until spinach starts to wilt.
Creamy Pasta Sauce:
Add half-and-half to the mushroom and spinach mixture; bring to a quick boil; immediately reduce to simmer.
Add 2/3 c. shredded Parmesan cheese and 1/4 t. salt. Continue stirring while the sauce simmers and until the cheese melts.
Add caramelized onions back to the skillet with the pasta sauce.
Pasta:
Cook pasta according to package instructions, about 9-13 minutes; drain.
Add cooked and drained pasta to the creamy sauce. Cook and stir over low heat for several minutes to reheat.
If the sauce is too thick, add a small amount of half-and-half to thin it out. If it's too thin, stir in a small amount of shredded Parmesan cheese while the sauce simmers.
Serve with more shredded Parmesan cheese sprinkled on top.
4 servings.
*Tip: You can use 1/2 c. heavy cream plus 1/2 c. milk as a substitute for 1 c. half-and-half, if needed.
