Description

Everyone will surely love this new and improved chicken salad recipe. Starting with canned chicken makes it quick and easy to enjoy in about 10 minutes. Add a bit of mayonnaise, chopped celery, onion and lemon juice to brighten the flavors.

Ingredients

12.5 oz. can chicken breast in water, drained
1/3 c. mayonnaise
2 stalks celery, finely chopped (about 1/2 c.)
2 T. finely chopped onion
1/4 c. shredded carrots, optional
2 t. lemon juice
dash lemon pepper seasoning
8 bread slices

Stir the drained chicken, mayonnaise, celery, onion, lemon juice, lemon pepper seasoning and shredded carrots, if using, in a bowl.

Divide the chicken mixture among 4 bread slices; top with remaining bread slices.

4 servings.

Tip: If wanting to make it a melt, reduce the bread to 4 slices. Evenly divide the chicken mixture between the bread slices; top with the cheese. Bake at 375 degrees F for 8 minutes or until the cheese has melted.
