Description
This amazing pasta meal can be on your table in less than 30 minutes. It starts with refrigerated cheese ravioli, fresh vegetables and cheese in a garlic herb sauce.
Ingredients
- 1 T. olive oil
- 1 lb. asparagus, ends trimmed, cut into 2-inch pieces
- 2 c. cherry or grape tomatoes, halved
- 3 cloves garlic, minced
- salt and pepper, to taste
- 1/4 c. chicken broth
- 1 T. lemon juice
- 1/4 c. fresh basil, chopped
- 1/4 c. fresh parsley, chopped
- 1/4 c. grated Parmesan cheese, plus more for serving
- 20 oz. package refrigerated four cheese ravioli
Steps
- Cook the ravioli according to the package instructions; drain; set aside.
- In a large skillet, heat the olive oil over medium-high heat. Add the asparagus; cook 4-5 minutes until tender-crisp.
- Add the tomatoes and garlic to the skillet; season with salt and pepper. Cook for 2-3 minutes until the tomatoes begin to soften.
