Short on time to cook but still want a delicious, satisying meal? This one pot pasta dish provides a pasta dish that's easy and takes only 7 simple ingredients to prepare.

Ingredients

4 bacon slices
1 small yellow onion, chopped (about 1/2 c.)
10.5 oz. can condensed cream of chicken soup
3 1/2 c. chicken broth
1/2 c. grated Parmesan or Pecorino Romano cheese
8 oz. uncooked spaghetti
1 c. frozen peas, thawed
salt and pepper, to taste

Cook the bacon in a 6 qt. Dutch oven or pot over medium-high heat for 5 minutes or until the bacon is crisp. Transfer the bacon to a paper towel lined plate to drain and cool. Crumble; set aside.

Discard all but 1 T. bacon drippings. Add the onion to the drippings in the pot; cook and stir for 1 minute.

Stir in the soup, broth and cheese; heat to a boil. Stir in the spaghetti. Reduce heat to medium-low; cook for 10 minutes or until the spaghetti is tender and the soup mixture is thickened, stirring occasionally.

Stir in the peas; add the bacon. Season to taste with salt and pepper.

Sprinkle with more cheese just before serving, if desired.

4 servings.

*Tip: Substitute 2 c. fresh baby arugula for the peas and diced pancetta for the bacon, if desired.
