Take chicken salad to a whole new level with a twist on the classic recipe. It's a healthy but delicious dish that's dairy and gluten free with a tangy and smokey flavor that is sure to please.
Ingredients
- 1 rotisserie chicken, deboned, meat roughly chopped
- 1 c. mayonnaise
- 1 c. celery, diced
- 1 c. red onion, diced
- 1/2 c. chives or green onion tops, chopped
- 1/4 c. apple cider vinegar
- 2 T. smoked paprika
- 1 T. celery seed
- freshly squeezed juice from 1 lemon
- salt and freshly ground black pepper, to taste
Steps
- Mix all ingredients together in a large bowl.
- Serve on your favorite bread, crackers, in a wrap, on top of lettuce leaves or straight from the bowl.
- 8 servings.
