Description
This casserole might have Sunday in its name, but it's perfect for busy weeknight dinners too. It's quick and easy, economical with simple ingredients and even better, delicious.
Ingredients
1 lb. ground beef
1 medium onion, chopped
1 c. sliced carrots
1 c. sliced celery
1 c. frozen peas
2 c. cooked egg noodles (from 1/2 c. dry)
1 can cream of mushroom soup (or favorite cream of soup)
1/2 c. milk
1 c. shredded Cheddar cheese, divided

Preheat the oven to 350 degrees F. Grease a 9x13" baking dish.
Cook the egg noodles following package instructions, about 7-10 minutes; drain; set aside.
Heat a large skillet over medium heat; add the ground beef and onion; cook until the beef is browned, breaking it apart while cooking. Discard excess grease. Stir in the carrots, celery, and frozen peas, cooking for a few minutes until slightly softened.
Add the cooked egg noodles to the skillet. Pour in the cream of mushroom soup and milk; stir until combined. Add 1/2 c. of the cheese, stirring until melted into the mixture.
Transfer the mixture to the prepared baking dish, spreading out evenly. Sprinkle the remaining cheese over the top.
Bake for 25-30 minutes, or until the cheese is golden and bubbly.
Allow the casserole to cool for a few minutes.
Serve.
6 servings.
Store leftovers in the refrigerator for up to 3 days.
