Description
This is a delicious alternative to the regular ravioli in tomato sauce. It's perfect for a busy weeknight dinner when time is short but you still need a delicious meal.
Ingredients
- 1/4 c. olive oil
- 1/4 t. crushed red pepper flakes
- 1 T. finely minced garlic from about 6 cloves
- salt
- 32 oz. fresh or frozen cheese ravioli
- 3 T. minced fresh parsley or 1 T. dried parsley
- 1 T. fresh lemon juice
- shredded Parmesan cheese, for serving
Steps
- In a small saucepan, heat oil over low heat for 3 minutes. Add red pepper flakes and garlic; cook 2 minutes; set aside.
- In a large pot of well salted boiling water, cook ravioli according to package directions; drain well; return to the warm pot.
- Gently toss ravioli with the flavored oil, parsley, lemon juice, and 1/4 t. salt.
