Description

This is a flavorful white pizza that's to die for. It starts with a chewy crusy that's topped with smoked Mozzarella and Ricotta cheese, sauteed garlicky spinach with a touch of lemon.

Ingredients

Crust:
1 c. warm water
3 t. active dry yeast
1 T. honey
1 T. olive oil
2 1/2 c. all-purpose flour
1 t. salt
flour or coarse cornmeal, for dusting

Filling:
2 T. unsalted butter
1 sweet onion, thinly sliced
Kosher salt and pepper, to taste
4 garlic cloves, minced
12 oz. fresh spinach
2 T. fresh lemon juice
8 oz. smoked Mozzarella cheese, freshly grated
1/2 c. Ricotta cheese
crushed red pepper flakes, for topping
fresh herbs or basil, for topping
finely grated Parmesan cheese, for topping

In a large bowl, combine water, yeast, honey, and olive oil; mix; let sit until foamy, about 10 minutes. Add flour and salt; mix until sticky. Knead on a floured surface. Let rise in an oiled bowl covered with a towel in a warm place for about 1 to 1 1/2 hours.

In a skillet, melt butter; sauté onions with salt and pepper until browned, about 20 minutes. Add garlic, spinach and lemon juice, cooking until spinach is wilted.

Preheat oven to 450 degrees F. Dust a 10x15 inch baking sheet with flour or cornmeal.

Roll out the risen dough to fit the baking sheet; brush with olive oil. Spread on the sautéed spinach and onions; top with smoked Mozzarella; dollop with Ricotta.

Bake for 15-20 minutes until golden.

Serve, topped with crushed red pepper flakes, Parmesan cheese, and fresh herbs.

Serve.
