This award winning recipe will also be family tested and approved. It's perfect for St. Patrick's Day or any day, for that matter. It's thick, satisfying and delicious.

Ingredients

1 lb. beef stew meat*
4 medium carrots, sliced
6 sprigs fresh thyme
1 1/2 bottle Guinness (or other good stout beer)
1 pkg. frozen pearl onions**
1/2 c. water
1/2 c. all-purpose flour
1/4 c. honey, or to taste
salt and pepper
mashed potatoes, for serving

Trim and dry stew meat with paper towels.

Heat a bit of oil in a large pot; add meat; brown.*

Add sliced carrots.

Add the Guinness until meat and carrots are covered.

Simmer for about 1 hour or until the meat is to your liking.

Add onions and thyme; simmer for 30 minutes.

Mix flour and water in a bowl until making a smooth slurry.

Slowly add the slurry to the stew; cook until thickened.

Add honey, a little at a time, salt, and pepper. Ajust seasonings to taste.

Serve over mashed potatoes.

4 servings.

*You can toss the beef in a bit of seasoned flour before browning, if desired.

** You can substitute frozen onions with an 8 oz. package of fresh pearl onions, cleaned and peeled.
