Ingredients
- 3-4 large Russet potatoes
- olive oil
- salt and pepper, to taste
- 2 c. Cheddar cheese, shredded
- crisp bacon, chopped or crumbled
- sour cream, or crema
- chives or green onions, chopped
Steps
- Carefully slice the potatoes thinly with a knife, about 1/8 inch thick, or slice them on a mandolin.
- Place them in a large bowl filled with cold water; soak for 30-45 minutes.
- Meanwhile, preheat the oven to 400 degrees F.
