3-4 large Russet potatoes
olive oil
salt and pepper, to taste
2 c. Cheddar cheese, shredded
crisp bacon, chopped or crumbled
sour cream, or crema
chives or green onions, chopped

Carefully slice the potatoes thinly with a knife, about 1/8 inch thick, or slice them on a mandolin.

Place them in a large bowl filled with cold water; soak for 30-45 minutes.

Meanwhile, preheat the oven to 400 degrees F.

Remove the potatoes from the water; pat them very dry with a clean kitchen towel or paper towels.

Place potatoes in a single layer on 2 baking sheets. Drizzle on about a 1/4 c. olive oil; season with a few large pinches of salt and pepper; toss until evenly coated with oil and seasonings. Redistribute them on the 2 baking sheets in a single layer.

Bake 40-45 minutes, until potatoes are beginning to turn brown and crispy. Flip over every 10-15 minutes to ensure they don't stick to the pans. If some slices crisp up faster than others, remove them from the pan; place on a plate lined with paper towels. Once all the potatoes are done, transfer the remaining to the paper towels to cool for about 10 minutes.

Nacho Assembly:
Spray a sheet pan with non-stick cooking spray. Spread out the crisp potatoes on the pan. Sprinkle the potatoes generously with 2 c. Cheddar cheese.

Bake for 2-3 minutes at 400 degrees F. until the cheese has melted, giving more time if wanting the cheese a little more melted, but keep a close eye on them. The cheese can over-bake very quickly.

As soon as the nachos come out of the oven, drizzle with sour cream, thinned down with a little milk if desired or use crema.

Sprinkle on the bacon, chives or green onions.

Serve immediately while hot.

4 servings.

*Make it vegetarian by omitting the bacon.
