Description

This delicious chicken can be ready for your table in less than 30 minutes. It's easy to make with just a few ingredients that you may already have on hand. Serve it with a side of angel hair pasta or spaghetti.

Ingredients

2 boneless, skinless chicken breasts (or 4 thin chicken cutlets)
1 egg, beaten
1/2 c. flour
1/2 t. garlic powder
1/2 t. salt
1/4 t. freshly ground black pepper
2 T. butter
1 T. olive oil
1 c. chicken broth
1 lemon, zested and juiced
1/4 c. dry white wine, optional

Lay each breast flat on a cutting board; very carefully split each breast in half horizontally to create 2 thin cutlets.

Beat the egg in a shallow dish.

In another dish, combine the flour, garlic powder, salt, and black pepper.

Heat the butter and olive oil in a large skillet until sizzling.

Dip each chicken cutlet first in the beaten egg, then in the flour mixture, pressing the coating on thickly.

Place the chicken in the hot skillet; cook without moving for 5 minutes on the first side until golden brown. Flip over; cook for another 4 minutes without moving.

Pour in the chicken broth, lemon zest, lemon juice and white wine, if using. Let simmer for 3-4 minutes until the chicken is fully cooked.

Serve immediately.
