Description
This pistachio crusted salmon makes a great weeknight dinner choice because is's simple and and only takes 15-20 minutes to prepare. It's delicious, and the salmon and pistachio make a great combo.
Ingredients
- 3 (5-6 oz.) Atlantic salmon fillets
- 1 T. Dijon or stone ground mustard
- 1 T. olive oil
- 1 garlic clove, crushed
- 1 T. lemon juice
- 1 t. honey
- 1/4 c. crushed pistachios, roasted and salted
- salt and pepper
Steps
- Preheat oven to 375 degrees F.
- Pat each salmon fillet dry; season generously with salt and pepper.
- In a small bowl, whisk together the mustard, lemon juice, garlic, olive oil and honey.
