This pistachio crusted salmon makes a great weeknight dinner choice because is's simple and and only takes 15-20 minutes to prepare. It's delicious, and the salmon and pistachio make a great combo.

Ingredients

3 (5-6 oz.) Atlantic salmon fillets
1 T. Dijon or stone ground mustard
1 T. olive oil
1 garlic clove, crushed
1 T. lemon juice
1 t. honey
1/4 c. crushed pistachios, roasted and salted
salt and pepper

Preheat oven to 375 degrees F.

Pat each salmon fillet dry; season generously with salt and pepper.

In a small bowl, whisk together the mustard, lemon juice, garlic, olive oil and honey.

Brush each fillet with the mustard mixture. Top with the crushed pistachios, gently pressing down so that they stick.

Bake for 12-15 minutes, depending on the thickness of the salmon. If baking a larger uncut piece, cook time may range up to 18 minutes.

Serve fresh with your favorite side dishes.
