Ingredients
- Grilled Chicken:
- 2 boneless, skinless chicken breasts
- 1 T. olive oil
- 1 t. chili powder
- 1/2 t. cumin
- 1/2 t. garlic powder
- 1/2 t. salt
- 1/2 t. black pepper
- 1/2 t. smoked paprika
- 1 T. lime juice
- Bowl:
- 1 c. cooked black beans (drained and rinsed)
- 1 c. corn (fresh or canned, drained)
- 1 c. chopped romaine lettuce
- 1/2 c. pico de gallo (tomatoes, red onion, cilantro, lime juice, salt)
- 1/2 c. guacamole (mashed avocado, lime juice, salt, cilantro)
Steps
- Marinade:
- In a bowl, mix together olive oil, chili powder, cumin, garlic powder, salt, black pepper, paprika, and lime juice.
