This burrito bowl is easy to prepare. It's delicious. fresh, flavorful, and packed with protein.

Ingredients

Grilled Chicken:
2 boneless, skinless chicken breasts
1 T. olive oil
1 t. chili powder
1/2 t. cumin
1/2 t. garlic powder
1/2 t. salt
1/2 t. black pepper
1/2 t. smoked paprika
1 T. lime juice

Bowl:
1 c. cooked black beans (drained and rinsed)
1 c. corn (fresh or canned, drained)
1 c. chopped romaine lettuce
1/2 c. pico de gallo (tomatoes, red onion, cilantro, lime juice, salt)
1/2 c. guacamole (mashed avocado, lime juice, salt, cilantro)

Marinade:
In a bowl, mix together olive oil, chili powder, cumin, garlic powder, salt, black pepper, paprika, and lime juice.

Chicken:
Coat chicken breasts evenly; marinate for 10 minutes.

Preheat a grill pan or skillet over medium heat. Cook chicken for 5-7 minutes per side until golden brown and fully cooked. Let rest for 5 minutes. Chop into bite-sized pieces.

Guacamole: In a bowl, mash the avocado with lime juice, salt, and cilantro.

Pico do Gallo:
For the pico de gallo, combine chopped tomatoes, red onion, cilantro, lime juice, and salt.

Assembly:
In a bowl, add a base of romaine lettuce.
Add grilled chicken, black beans, corn, guacamole, and pico de gallo in separate layers.

Mix it up or serve as is.

2-4 servings.
