Ingredients

  • Grilled Chicken:
  • 2 boneless, skinless chicken breasts
  • 1 T. olive oil
  • 1 t. chili powder
  • 1/2 t. cumin
  • 1/2 t. garlic powder
  • 1/2 t. salt
  • 1/2 t. black pepper
  • 1/2 t. smoked paprika
  • 1 T. lime juice
  • Bowl:
  • 1 c. cooked black beans (drained and rinsed)
  • 1 c. corn (fresh or canned, drained)
  • 1 c. chopped romaine lettuce
  • 1/2 c. pico de gallo (tomatoes, red onion, cilantro, lime juice, salt)
  • 1/2 c. guacamole (mashed avocado, lime juice, salt, cilantro)
