Description
In a little more than 30 minutes, you can have this meal on your table. It's full of bite sized pieces of buttery, garlicky chicken served along side linguine coated in a creamy Parmesan sauce.
Ingredients
- 1 lb. boneless, skinless chicken breasts, cut into bite-sized pieces
- zest and juice of 1 lemon
- 1/2 t. Italian seasoning
- salt and pepper, to taste
- 2 T. olive oil
- 3 cloves garlic, minced
- 2 T. butter
- 8 oz. linguine
- 3/4 c. freshly grated Parmesan cheese
- 1/2 c. reserved pasta cooking water
- 1/4 c. heavy cream (optional, for extra creaminess)
- freshly chopped parsley, for garnish
Steps
- In a bowl, combine the chicken pieces with the lemon zest, lemon juice, Italian seasoning, salt, and pepper; mix well. Let marinate while cooking the pasta.
- Bring a large pot of well salted water to a boil. Cook the linguine according to the package directions until al dente. Before draining, reserve 1/2 c. pasta cooking water. Drain; set aside.
- In a large skillet over medium-high heat, add the olive oil. Add the marinated chicken in a single layer; cook for about 4-5 minutes per side, or until golden brown and fully cooked through.
