In a bowl, combine the chicken pieces with the lemon zest, lemon juice, Italian seasoning, salt, and pepper; mix well. Let marinate while cooking the pasta.
Bring a large pot of well salted water to a boil. Cook the linguine according to the package directions until al dente. Before draining, reserve 1/2 c. pasta cooking water. Drain; set aside.
In a large skillet over medium-high heat, add the olive oil. Add the marinated chicken in a single layer; cook for about 4-5 minutes per side, or until golden brown and fully cooked through.
Transfer the chicken to a plate; set aside.
In the same skillet, reduce the heat to medium. Add the butter and minced garlic; cook for 1-2 minutes, stirring constantly, until fragrant.
Add the linguine to the skillet with the garlic butter sauce; toss. Slowly add in the Parmesan cheese, stirring until melted. Pour in the reserved pasta water, a little at a time, until the sauce reaches the desired consistency. If using, add in the heavy cream for extra richness.
Return the cooked chicken to the skillet; toss until well combined and heated through.
Serve immediately, sprinkled with fresh parsley.
