These oven baked salmon fillets with asparagus are an easy dish to prepare, incredibly delicious and healthy. They are baked in foil packets which makes clean up a snap.
Ingredients
- 4 - 6 oz. salmon fillets, skin-on, to retain moisture
- 1 lb. bright green asparagus spears, trimmed
- 2 T. olive oil
- 1 lemon, sliced into rounds
- 3 cloves garlic, minced
- 1 t. salt
- 1/2 t. black pepper
- herb choices: dill, parsley, paprika or your favorite
Steps
- Preheat oven to 400 degrees F.
- Rinse the salmon fillets; pat dry. Discard the woody ends from the asparagus.
- Place 4 large sheets of aluminum foil on a baking sheet. Arrange the asparagus spears in the center of each sheet. Lay a salmon fillet on top of the asparagus in each packet. Drizzle with olive oil; squeeze fresh lemon juice on the tops. Add garlic; sprinkle with salt, pepper, and choice of herbs.
