These oven baked salmon fillets with asparagus are an easy dish to prepare, incredibly delicious and healthy. They are baked in foil packets which makes clean up a snap.

Ingredients

4 - 6 oz. salmon fillets, skin-on, to retain moisture
1 lb. bright green asparagus spears, trimmed
2 T. olive oil
1 lemon, sliced into rounds
3 cloves garlic, minced
1 t. salt
1/2 t. black pepper
herb choices: dill, parsley, paprika or your favorite

Preheat oven to 400 degrees F.

Rinse the salmon fillets; pat dry. Discard the woody ends from the asparagus.

Place 4 large sheets of aluminum foil on a baking sheet. Arrange the asparagus spears in the center of each sheet. Lay a salmon fillet on top of the asparagus in each packet. Drizzle with olive oil; squeeze fresh lemon juice on the tops. Add garlic; sprinkle with salt, pepper, and choice of herbs.

Fold the aluminum foil over the salmon and asparagus, crimping the edges to seal tightly.
Place the foil packets on the baking sheet.

Bake 20-25 minutes, depending on the thickness of the salmon.

When done, the salmon should be opaque and flake easily with a fork.
