This is the perfect quick, light lunch or dinner for salad lovers. It's made with shredded chicken, black beans, tomatoes, corn and onion in a light seasoned mayonnaise dressing.
Ingredients
2 c. cooked, shredded chicken, from about 1 lb.*
1 c. corn kernels, drained
1 c. black beans, drained and rinsed
1/2 c. diced tomatoes
1/4 c. finely chopped onion
1/4 c. chopped fresh cilantro, optional
1 c. mayonnaise
2 T. taco seasoning
1 T. lime juice
salt and pepper, to taste

In a large bowl, mix the shredded chicken, corn, black beans, tomatoes, onion, and cilantro until evenly distributed.
In a small bowl, whisk together the mayonnaise, taco seasoning, and lime juice until smooth.
Pour the dressing over the chicken mixture; stir until well coated.
Season with salt and pepper, to taste. Serve immediately or refrigerate until serving.
6 servings.
*Rotisserie chicken works great.
