Toasted Italian Grinder Sandwiches

Description
Whether you call it a grinder or a sub sandwich, it starts the same way, with a hoagie roll as the base, an assortment of deli meats, cheese and a tangy slaw.
Ingredients
Slaw:
1/2 c. pepperoncini peppers, thinly sliced
1/4 c. freshly shredded Parmesan cheese
1/3 c. mayonnaise
1 t. red wine vinegar
1 t. dried oregano
1/2 t. granulated garlic or garlic powder
1/4 t. kosher salt
1/4 t. crushed red pepper flakes, or to taste
4 c. iceberg lettuce, shredded
1/4 c. red onion, very thinly sliced
Sandwiches:
4 hoagie rolls
8 oz. thinly sliced salami
8 oz. smoked or honey ham
8 oz. smoked or honey roasted turkey
4 oz. prosciutto
8 oz. sliced Provolone cheese
2 tomatoes, sliced 1/4" thick
1/4 c. freshly shredded Parmesan cheese

Slaw:
In a medium bowl, combine the pepperoncini, Parmesan cheese, mayo, vinegar, oregano, garlic, salt, and red pepper flakes; stir. Add the lettuce and onions; toss.
Sandwiches:
Preheat the oven to 425 degrees F.
Open the hoagie rolls; place them on a large baking sheet.
Layer one side of each roll with salami, ham, turkey, prosciutto, and Provolone cheese.
Place in the oven. Toast for 6-8 minutes, until the cheese has melted and the bread is lightly toasted. Remove from the oven.
Layer tomatoes over each warm sandwich; top with slaw and a sprinkling of Parmesan cheese.
Serve immediately.
