Description
Make your own reuben sandwiches that rival any restaurant's. They're made with corned beef, sauerkraut, Swiss cheese and a homemade Russian dressing in between store bought dark rye bread.
Ingredients
Sandwiches:
1/2 lb. corned beef
1/2 t. olive oil
6 slices dark rye bread or your favorite rye bread
2 T. unsalted butter, at room temperature
1/2 c. sauerkraut, well drained
6 slices Swiss cheese
Homemade Russian Dressing:
1/4 c. mayonnaise
1 1/2 t. chili garlic sauce
1/2 t. lemon juice
1 t. creamy horseradish
1 garlic clove, minced
1/2 t. Worcestershire sauce
1/2 T. onion, finely grated
1/8 t. paprika
salt and pepper, to taste

Combine all of the Russian dressing ingredients in a small bowl; set aside.
Add the olive oil to a large skillet. Once hot, add corned beef; cook over medium heat until the meat is warmed.
Butter one side of each bread slice; place bread on a platter with the buttered sides down.
Spread on the Russian dressing, top with corned beef, 3 slices of cheese per sandwich, and sauerkraut; top each with a slice of bread. Butter the top of the bread.
Place the sandwiches in a large skillet. Cook over medium heat for about 4-6 minutes, flipping once, until the cheese melts and bread is crispy.
Serve immediately.
