Description
This pork roast dinner is made effortlessly in the slow cooker. It starts with a boneless pork butt, with potatoes, carrots, seasonings cooked in chicken broth.
Ingredients
3 lb. boneless pork butt*
1 1/2 T. fennel seed
1 t. dried oregano
1 t. dried rosemary
1/2 t. crushed red pepper flakes
2 t. black peppercorns
1 T. kosher salt**
2 T. olive oil
8 cloves garlic, chopped
1/2 c. chicken stock or broth
1 c. white wine
1 1/2 lb. baby gold potatoes
3 large carrots, peeled and chopped into 2 to 3" pieces
1 - 2 T. red wine vinegar
fresh parsley or basil, for optional garnish

Add the fennel seed, oregano, rosemary, red pepper flakes, peppercorns, and salt to a mortar or spice grinder; grind until blended, but still a bit coarse.
Discard the string from the pork roast; pat roast dry with paper towels; coat all over with the seasoning blend.
Add the olive oil to a pan over medium heat. Once hot, brown the pork roast on all sides.
While the pork is browning, add the carrots and potatoes to a slow cooker.
Once browned, nestle the pork roast into the potatoes and carrots. Add the garlic to the same pan the pork was used to brown the roast; cook for about 30 seconds to 1 minute, until fragrant and somewhat golden.
Add the wine and chicken stock/broth to the pan, scraping up the browned bits and leftover spices on the bottom. Cook for about 5 minutes, until the mixture has slightly reduced.
Pour the cooking liquid over the pork roast, potatoes, and carrots. Cook for 4 hours on high heat.
After 4 hours, flip the roast over for even cooking. This is optional, but will produce a more tender roast. Cook for another 2 hours on high.
Check for doneness. The pork should be fall-apart tender and shred easily with 2 forks.
Stir the red wine vinegar into the cooking liquid. Season to taste.
Shred the pork apart with 2 forks.
Serve.

Tips:
*Pork tenderloin is not recommended because it's too lean. If pork butt/Boston butt can't be found, pork shoulder is the next best cut to use.
**If using table salt or sea salt, use half or less of the recommended amount; taste for seasoning once the pork is done. Add salt, to taste, as needed.
