Ingredients

2 lb. boneless, skinless chicken thighs
1/2 t. salt
1/4 t. black pepper
1/2 c. honey
1/4 c. soy sauce
1/8 c. chopped onion
1/8 c. ketchup
1 T. vegetable oil
1 clove garlic, minced
1/4 t. crushed red pepper flakes
2 T. corn starch, optional, for a thicker sauce
1/4 c. water, optional, for a thicker sauce
cooker rice, your favorite

Place a slow cooker liner in the crock of a slow cooker.

Season both sides of the chicken with salt and pepper; place into the prepared slow cooker.

In a small bowl, combine honey, soy sauce, onion, ketchup, oil, garlic, and crushed red pepper flakes. Pour over the chicken.

Cook on High for 2 to 3 hours or on Low for 4 to 5 hours.

When the chicken is done, transfer it to a cutting board; cut into bite-sized pieces.

If wanting a thicker sauce, whisk the corn starch with the water. Pour the corn starch mixture into the slow cooker.

Transfer the chicken back into the slow cooker; cover; cook on High until the sauce has thickened, on High for 30 to 45 minutes.

Serve the chicken and sauce over your favorite rice.

6 servings.

*Tip: Since there is honey in the recipe, it will burn around the edges. To avoid this, use a slow cooker liner or stir around the edges every hour.
