Description
It's a salad and a sandwich all in one dish. The chicken is first marinated in a lemon and garlic Caesar marinade, then grilled to perfection. Add that with a Caesar salad, add it to your favorite wrap, and voila, you have an easy, delicious dish.
Ingredients
Grilled Chicken:
1/4 c. extra virgin olive oil
freshly squeezed juice and zest of 1 lemon
2 t. minced garlic
Kosher salt and freshly ground black pepper, to taste
4 - 8 oz. boneless, skinless chicken breasts
Caesar Dressing and Salad:
3 T. extra-virgin olive oil
3 T. mayonnaise
1 T. plus 2 t. freshly squeezed lemon juice
1 T. plus 2 t. Dijon mustard
2 t. Worcestershire sauce
1/2 t. very finely minced garlic
1 finely minced anchovy filet or 1/4 t. anchovy paste, optional
Kosher salt and freshly ground pepper, to taste
1/2 c. finely grated Parmesan cheese, divided
2 hearts of romaine, chopped into bite-sized pieces
1/2 red onion, thinly sliced
6 - 9" to 10" whole wheat, spinach wraps or flour tortillas

Chicken:
In a shallow container, combine the olive oil, lemon juice, lemon zest, garlic, salt, and pepper. Add the chicken; turn to coat.
If time permits, marinate the chicken in the refrigerator for 2 - 6 hours before grilling.
Caesar Dressing and Salad:
In a container with a lid, add the olive oil, mayonnaise, lemon juice, Dijon mustard, Worcestershire sauce, garlic, anchovy, salt, and pepper. Cover tightly; shake to combine. Add half of the Parmesan cheese; shake to combine.
When ready to cook; preheat the grill to medium-high. Grill the chicken 5 - 6 minutes per side, until cooked through, with nice grill marks on each side. Let the chicken cool slightly. Cut into small bite-sized pieces or shred.
In a large bowl, combine the chicken, romaine lettuce, and red onion with the dressing. Add the remaining Parmesan cheese; toss.
Add 1 1/2 c. salad filling to the middle each wrap, leaving the top and bottom empty; fold in the ends over the filling, and roll closed. A bit of mayonnaise smeared on the edges will help it stay sealed. If desired, cut each in half on the diagonal.
Serve.
6 servings.
Tips: The Caesar dressing can be made in advance and stored in the refrigerator for up to 5 days. The chicken can be cooked and kept in a closed container in the refrigerator for 3 to 4 days.
