Enjoy the creamy deliciousness of the restaurant's soup without even leaving your home. It's made with a few fairly simple ingredients and can be ready to eat in about 30 minutes.
Ingredients
- 3 or 4 boneless, skinless chicken breasts, cooked and diced
- 1 stalk of celery, chopped
- 1/2 white onion, diced
- 2 t. minced garlic
- 1/2 c. shredded carrots
- 1 T. olive oil
- 4 c. low-sodium chicken broth
- salt and pepper, to taste
- 1 t. thyme
- 16 oz. potato gnocchi
- 2 c. half and half*
- 1 c. fresh spinach, roughly chopped
Steps
- Heat olive oil in a large pot over medium heat. Add celery, onions, garlic, and carrots; saute 2-3 minutes until onions are translucent.
- Add chicken, chicken broth, salt, pepper, and thyme; bring to a boil. Gently stir in gnocchi; boil for 3-4 minutes; reduce heat to a simmer; cook 10 minutes.
- Stir in half and half and spinach; cook 1-2 minutes, until spinach is tender.
