Ingredients
3 or 4 boneless, skinless chicken breasts, cooked and diced
1 stalk of celery, chopped
1/2 white onion, diced
2 t. minced garlic
1/2 c. shredded carrots
1 T. olive oil
4 c. low-sodium chicken broth
salt and pepper, to taste
1 t. thyme
16 oz. potato gnocchi
2 c. half and half*
1 c. fresh spinach, roughly chopped

Heat olive oil in a large pot over medium heat. Add celery, onions, garlic, and carrots; saute 2-3 minutes until onions are translucent.
Add chicken, chicken broth, salt, pepper, and thyme; bring to a boil. Gently stir in gnocchi; boil for 3-4 minutes; reduce heat to a simmer; cook 10 minutes.
Stir in half and half and spinach; cook 1-2 minutes, until spinach is tender.
Season to taste with salt and pepper, if needed.
Serve.
4 servings.
*For even more creamy richness, swap 1 c. of the half and half with heavy cream, if desired.
