1 lb. spaghetti
4 - 6 Italian Sausage links, your favorite
1/4 c. olive oil, plus extra for searing Italian sausage links
4 - 6 garlic cloves, thinly sliced
4 - 6 dried chili peppers, chopped or 1 t. dried chili flakes
1 c. diced red bell peppers
2 T. dried oregano, or to taste
2 c. shredded Parmesan cheese
2 c. reserved pasta cooking water

Boil spaghetti according to package instructions; reserve 2 c. cooking water.

While the spaghetti is cooking, add some olive oil to a large skillet; sear and cook the Italian sausage links.

When the sausage is fully cooked, set aside; lower the heat; add the 1/4 c. olive oil and the sliced garlic.

Add the dried chili peppers or dried red pepper flakes and the oregano to the garlic and olive oil. Let it warm slowly in the olive oil.

When the pasta is done cooking, use tongs to transfer it right from the pot of water to the olive oil mixture in the skillet; increase heat; use tongs to stir around the spaghetti, coating it in the garlic, herbs and peppers.

Add in a 1 to 2 c. grated Parmesan cheese; toss until melted; add the reserved pasta water, 1/4 c. at a time; let simmer in the sauce until the sauce has reached the desired creamy texture.

Serve, topped with the sausages.
