Chicken Piccata Meatballs

Description

These delicious chicken piccata meatballs are a flavorful twist on the classic dish. The meatballs are served in a tangy, buttery lemon-caper sauce and are great served alone, in a sub sandwich, over pasta or rice.

Ingredients

  • 1 lb. ground chicken
  • 1/4 c. grated Parmesan cheese
  • 2/3 c. panko bread crumbs
  • 1/2 t. salt
  • 4 cloves garlic, minced
  • 1 T. lemon zest
  • 2 T. olive oil
  • 4 T. butter
  • 3 cloves garlic, minced
  • 1 T. flour
  • 1 c. chicken broth
  • 1/4 c. capers plus 2 T. caper brine (from the jar)
  • 1/4 c. lemon juice

Steps

  1. In a large bowl, mix together the ground chicken, Parmesan cheese, panko bread crumbs, salt, garlic, and lemon zest.
  2. Use 2 T. of the mixture, to roll into balls, using all of the meat mixture.
  3. Heat a large sauté skillet over medium-high heat; add oil.
