These delicious chicken piccata meatballs are a flavorful twist on the classic dish. The meatballs are served in a tangy, buttery lemon-caper sauce and are great served alone, in a sub sandwich, over pasta or rice.

Ingredients

1 lb. ground chicken
1/4 c. grated Parmesan cheese
2/3 c. panko bread crumbs
1/2 t. salt
4 cloves garlic, minced
1 T. lemon zest
2 T. olive oil
4 T. butter
3 cloves garlic, minced
1 T. flour
1 c. chicken broth
1/4 c. capers plus 2 T. caper brine (from the jar)
1/4 c. lemon juice

In a large bowl, mix together the ground chicken, Parmesan cheese, panko bread crumbs, salt, garlic, and lemon zest.

Use 2 T. of the mixture, to roll into balls, using all of the meat mixture.

Heat a large sauté skillet over medium-high heat; add oil.

Once hot, add meatballs, turning them every few minutes to ensure even cooking. Cook for about 6 minutes; remove meatballs from the skillet.

In the same skillet, add the butter and garlic. Once melted, whisk in flour. Slowly whisk in chicken broth; add capers, caper brine, and lemon juice. Simmer sauce for 6-7 minutes; it will thicken as it cooks.

Add meatballs back into the skillet; cook for about 5-6 minutes, until sauce thickens. Carefully stir and spoon sauce over meatballs.

Serve meatballs alone, in a sub sandwich or over pasta or rice.
