Description
These delicious chicken piccata meatballs are a flavorful twist on the classic dish. The meatballs are served in a tangy, buttery lemon-caper sauce and are great served alone, in a sub sandwich, over pasta or rice.
Ingredients
- 1 lb. ground chicken
- 1/4 c. grated Parmesan cheese
- 2/3 c. panko bread crumbs
- 1/2 t. salt
- 4 cloves garlic, minced
- 1 T. lemon zest
- 2 T. olive oil
- 4 T. butter
- 3 cloves garlic, minced
- 1 T. flour
- 1 c. chicken broth
- 1/4 c. capers plus 2 T. caper brine (from the jar)
- 1/4 c. lemon juice
Steps
- In a large bowl, mix together the ground chicken, Parmesan cheese, panko bread crumbs, salt, garlic, and lemon zest.
- Use 2 T. of the mixture, to roll into balls, using all of the meat mixture.
- Heat a large sauté skillet over medium-high heat; add oil.
